This quick and creamy salad dressing can be used in a variety of salads, from a simple side salad with greens and tomatoes, to a hearty vegan salad with black beans and corn, or add your favorite Southwest-seasoned chicken, steak, or shrimp.
Ingredients
- 1 Medium Avocado, Very Ripe
- 2 Cloves Garlic, Grated
- 1 Cup Fresh Cilantro, Chopped (About 1 Bunch)

½ Cup New Mexico Salsa Hatch Green Chile Sauce
- Juice of Two Limes, About ¼ Cup
- 1 Cup Cold Water
Directions
Combine all ingredients in a blender until smooth.
- Transfer to a jar with a tight-fitting lid. Dressing will last 3-5 days in the fridge.
