A sweet and spicy take on a classic ketchup-glazed meatloaf. Try the sweet heat of our Mango Red Chile Preserves, or your favorite Cibolo Junction Chile Preserve.

1 Pound Ground Beef

2 Tablespoons Cibolo Junction Mango Red Chile Preserves, or Cibolo Junction Red Chile Preserves
- 1 Small White Onion, Finely Chopped
- 2 Cloves Garlic, Minced
- 1 Teaspoon Dijon Mustard
- ½ Cup Panko Bread Crumbs
- 1 Teaspoon Kosher Salt
- ½ Teaspoon Pepper
- 1 Large Egg

¼ Cup Red Chile Preserves
- 1 Teaspoon White Vinegar
- 1 Tablespoon Water

Directions
Preheat oven to 375℉ and line a baking sheet with parchment paper or aluminum foil.
In a large bowl, combine ground beef, 2 Tablespoons Cibolo Junction Mango Red Chile Preserves, onion, garlic, panko bread crumbs, salt, pepper, and egg. Mix until all ingredients are incorporated, being careful not to overmix.
Transfer the meat mixture to the sheet pan and shape it into a loaf about 8-10 inches long and 4-5 inches wide.
Prepare the glaze. In a small bowl, mix together ¼ cup red chile preserves, white vinegar, and water until smooth and combined. Brush the glaze mixture generously over the top of the meatloaf, spreading it evenly.
Bake for 45-50 minutes, or until the internal temperature reaches 160℉.
Remove from oven and let rest about 10 minutes before slicing and serving.
