Harvest Blend Flame Roasted Chimayo Chile

I've been searching for a product like this for years, and after having tried numerous brands, I found this Cibola Junction Chimayó Harvest Blend of Roasted Red and Green Chile in Sprouts in Albuquerque. It couldn't be more perfect and authentic. So glad it's NM TRUE Certified, also, as that shows participation in such a worthy program that we can all support.
As a lifelong chef, I appreciate not only the beautiful look of the chopped green and red chile, but the masterful blend of the two, in addition to the "hint of garlic" with a small amount of salt. The subtle lime really pulls it all together.
Now on my 3rd jar, in a short amount of time, I have discovered that I like to add the chile blend at the last minute to whatever I'm preparing so as not to overcook it. It's so New Mexican the way it is, so just heat it slightly, to preserve its perfection. And, isn't our State motto
'Red or Green?'. In this case, it's Red & Green!
Oh, I might add that the label for this product is the most beautiful and artistic
label ever, capturing the Southwest's cultural symbolism like nothing else on the market. I give them 5 stars and a Blue ribbon for the complete product.
Truly a great Christmas present, too.
